How is night flight time defined and logged under FAA rules?

For logging purposes FAR 1.1 defines night as the time between the end of evening civil twilight and the beginning of morning civil twilight. For passenger currency under 61.57(b) night is 1 hour after sunset to 1 hour before sunrise.
